You are dead right. I disagree that it's about demand - I think a lot of beginners and improvers welcome repetition and get completely lost in routines. At intermediate/advanced level the most useful classes are the ones that focus on getting one specific move or technique right in detail - but not many teachers understand dancing well enough to teach in that kind of detail.
