Your decisions sound reasonable to me, but you probably should have discussed with the promoter in advance what the people that normally attend that particular class could already do. I think you should have been paid.
Incidentally, how did you know the class were not up to your expectation of 'Intermediate'?
The reason I ask is that I recently attended a class which in theory was actually below my level but the teacher was someone I had never seen before. I struggled with the moves, even though they were not difficult, simply because the teacher ordered the leaders to use a hold which personally I find peculiar and does not work for me. The teacher may well have concluded that my level is lower than what it actually is.

Thank you, this is very helpful. Yes I should have discussed the level in detail with the promoter prior to accepting the work. This is a good point and one I naively didn't think to do.

This was only my 3rd venture into the club salsa scene and it is a little different... I have a lot to learn about the etiquete.

My criteria for an intermediate level is to at least be able to set up and execute a double spin smoothly and safely, though obviously this is not a rigid guide. Unfortunately the 80% within this class were struggling with a single turn and I mean struggling.

Perhaps I am too set in my ways and I just need to learn how to 'go with the flow'. We are always learning and this has been an unpaid lesson for me.
