The principal of whether you do or whether you don't is difficult to argue either way because there are three interested parties with clear different perceptions and wishes/beliefs...
Ultimately the person who has employed you has sway with their business about what is taught and how...
After saying that I think you've acted both responsibly and professionally and if you spoke to all concerned including the promoter then you have done all you could possibly do, to enlighten all concerned and correct possible future repeat scenarios...
When I employ teachers I give them an idea of what I'm looking for and what level they can/might expect to find in our club but after that I leave it to their professional opinion as to how they enact that advice...
I believe that although this is a dilemma … In most cases this problem shouldn't and won’t occur as most promoters would accept and respect your decision/s...
As for the promoter ... the best thing they could have done would be to have taken you aside after, or better still before, the event and made it clear to you, that under no circumstances would they like you to deviate from their ideals … In which case for all future events you have a professional choice.
I think it is shameful that they have not paid you! ... I would give them seven days notice to pay and start legal proceedings if they refuse ... not for the sake of the money but for principal of the thing.
