Salsa Fusion have probably been in that venue foe 4 or 5 years, previously they used the Our Lady of Notre Dame church-hall next to the Prince Charles Cinema off Leicester Square. At the time it was my favourite salsa-venue in London.
The crowd these days in Great Portland St is noticeably different, and I would say the reason why tap-water isn't an issue here is that there are lots of people buying alcoholic drinks. Those that drink free tap-water would be buying bottled water or other soft-drinks if it weren't available.
For most clubs to survive they need both the dancers and the drinkers who spend at the bar. The only examples where this isn't the case are the Jimmy Anton style 'socials', such as SoS.
The Palladium Ballroom in New-York. Temple of mambo, home to the Tito Rodriguez, Tito Puente and Machito Orchestras. It closed in 1966 not because the music went out of fashion.
It closed because it no-longer took enough money over the bar (though in it case this was due to losing its alcohol license).
