Forget all the administration malarky, while there would be additional admin. it could be dealt with reasonably easily.

The fundamental fatal flaw with the idea will the decimation of your beginner throughput because of customer perception.

You have 2 promoters in a town,

SalsaBarTake Ltd. has a weekly club charging £7 a lesson relying on people not drinking tap water and spending at the bar

SalsaCoverCharge Ltd. has a weekly club charging £12 a lesson passing on a cover charge to the venue.

Someone wants to take their first salsa lesson, which do you think they are going to choose?

Without beginner thoughput your club is dead.

Succinctly put and of course you have a great point without the usual essay I seem to get bogged down in but believe me the point about admin is relevant and from someone who has to deal with these issues I can tell you it is a BIG reason why I wouldn't go down the cover charge road apart from the risk that you have so perfectly made clear

Without employing an extra person (read extra cost) you are piling admin on the person on the door x by the number of people coming through ... I can tell you it is not insignificant
