Firstly it would be impractical and illegal to ban anyone on the basis of what they drank if it was tap water.
Secondly, my point was that we will always have tap water drinkers perhaps the only option is to play the numbers game and to try to attract such a large number that at least the drinks tab is reasonable and any shortfall will be minimal. Many venues have died away from teh scene not because they were not popular - tehy were just not popular enough or financially viable when compared with the wants and desires of the salsa customer.
Not sure what your point is now JD unless your arguing that if we accept all the tap water drinkers there'll be less smaller players and only one or two big players (those who can afford a hire fee of £2000 - £3000) and offering only one or two nights even in a city the size of London ... and from your post presumably OK by you!

You'd be wrong anyway about a promoter not being able to bar anyone from their venue ... If you run a night you have a legal right to dictate the terms of entry and if you want to, bar anyone for any reason you see fit except on the grounds of race, religion and most types of disability. In the case of tap water drinkers if you were challenged in a court of law you'd simply have to prove that their actions were detrimental to your business and that case can be proven on economical grounds as there is plenty of evidence to prove that this is indeed the case as the final point in your post proves
What is needed is a cultural shift in Salsa and promoters such as your self taking a stand and being brave enough to stand up and be counted arguing against people who can and do damage Salsa because either they don’t understand the damage that can be caused by ordering tap water or they don’t care about you, me and / or fellow dancers!
