All very good points I think and to be fair I have seen signs that this is already beginning to happen ... at our venue this had been the case even since we moved in a few weeks ago they, they have shifted to accomodate the Salsa crowd in some of the ways you have mentioned and other as in the cloakroom charge! There is always more they can do but as long as a good argument is presented to them the smart ones will move in that direction; providing of course there is some advantage for them in doing so...
The non alcoholic - non sickly - fruit juice cocktails are a good idea and I'll be putting that one to the managers of the venue we use straight right away...
